Edwards Mansion Fresh Orange Pie Recipe

Did you know, the first orange grove in Redlands was planted in 1882? Our city was the center of navel orange production in the world. In the 70's Edwards Mansion found a way to incorporate Redlands rich citrus history with tangy sweet deliciousness - Edwards Mansion Famous Orange Pie! 

Crust:

1 cup pecan crumbs (crush in blender)

1 cup shredded coconut

1/4 cup soft butter

1/4 cup sugar

Combine all ingredients and press on bottom and sides of a 10" pie plate. Save a small amount of the crumbs for garnish. Bake at 375° for 10-12 minutes. Cool.

Orange Pie Filling:

4 tbsp cornstarch

1 1/2 cups fresh orange juice

1/2 cup sugar

2/3 cup orange marmalade

1 tsp vanilla

1 tsp cinnamon

1/2 tsp nutmeg

6 large oranges, peeled and sectioned (Navel oranges are best, but Valencias may be used. Be sure all membrane and seeds are removed.)

Dissolve cornstarch in 1/4 cup orange juice. In saucepan, mix remaining orange juice, sugar, marmalade, vanilla, cinnamon, nutmeg. Heat and while constantly stirring, add orange juice/cornstarch mixture. Continue to cook until mixture is thick and clear. Add orange sections and mix gently. Pour into cooled pie crust. Chill 3-4 hours. Serve at room temperature, garnish with sweetened whipped cream and remaining crust crumbs.
